For its 12th anniversary, Solaire Resort Entertainment City provided guests with an exquisite dining experience, featuring the culinary mastery of Michelin-starred chef Sun Kim.

Known for his innovative approach to modern dining, Chef Sun, owner of two-Michelin-starred restaurant Meta, curated an exclusive six-course menu that dazzled the palates of guests at Waterside. Each dinner was at full capacity and provided an unforgettable experience, with the brunch being no exception—featuring world-class cuisine, exceptional service, and the thrill of witnessing a Michelin-star chef’s culinary vision come to life.

Originally from Busan, Korea, a city known for its beaches and seafood, Chef Sun moved to Seoul where he immersed himself in the F&B industry. His passion for food began in the kitchens of classic French and Italian restaurants in Seoul, which inspired him to study culinary arts at Le Cordon Bleu in Sydney. He learned under Japanese Chef Tetsuya Wakuda for three years and after so, moved to Singapore. At the age of 31, he opened Meta.

Guests were immersed in the essence of Meta through Chef Sun’s inventive dishes, brought to life at Waterside. For this exclusive anniversary celebration, Chef Sun crafted a menu that reflected his culinary journey, infusing his Korean heritage with elevated global flavors.

Upon entering Waterside, guests were immediately greeted by a warm, sophisticated ambiance. The welcome drinks, inspired by Chef Sun’s signature flavors, featured oolong tea paired with soju and a mocktail with oolong tea and pineapple–each sip offering a unique preview of the flavors to come. The exclusive six-course menu also featured the artistry of Tea Master He Jia, who curated tea pairings that beautifully complemented the dishes, adding an extra touch of refinement to the experience.

The meal began with a delicate sashimi of tuna, paired with cuttlefish, seaweed, yuzu, and myoga, a refreshing, light dish to start the course.

Next came Hokkaido scallop with rice, parsley, and aged soy sauce, a dish that balanced delicate sweetness and brine.

The third course, a reinvention of Chawanmushi with spanner crab, seafood broth, and chili oil, captivated diners. The bold umami flavors of this dish set the stage for the showstopper that followed–the Jeju abalone porridge.

Infused with lily bulb, kamtae, and chicken heart, this dish was a crowd favorite and a comforting yet complex preparation that carried the essence of Chef Sun’s signature style.

The Miyazaki grilled wagyu beef was the pinnacle of the evening, a rich, savory masterpiece served with celtuce, onion purée, and a mushroom ragout that complemented the tender beef in perfect harmony.

Dessert was in the form of sweet corn, local to the Philippines, with caramel and popcorn ice cream. The dish was an unexpected fusion of texture and flavor, a playful end to an unforgettable meal. He Jia’s infusion of black tea and rose petals rounded out the experience, offering a fragrant, delicate conclusion to the meal.
