Cirkulo Restaurant is delighted to announce the addition of two compelling new dishes to its specials menu, both crafted by the renowned Chef J. Gamboa. These exciting new creations promise to bring fresh flavors and unique culinary experiences to diners.

Torrenzos and Paella de Costillas de Vaca

First on the menu is Torrenzos, a tempting appetizer that features crisp-fried, salt-cured pork belly. This delectable tapa is served with a rich, 65-degree egg sauce, enhanced with Grana Padano cheese and a hint of Pedro Ximenez vinegar. It’s perfectly designed to complement a refreshing glass of Sangria.

Joining the lineup is the hearty Paella de Costillas de Vaca. This unique rice dish boasts seasoned rice generously topped with succulent braised U.S. beef short ribs and finished with an aromatic orange rind and parsley gremolata. Described as both unique and comforting, this paella is an ideal choice, especially with the current rainy weather.
