Since August 1995, those iconic red round doors have been a go-to spot for amazing Spanish food and countless cherished memories.

At the heart of it all are Malu Gamboa Lindo (a third-generation restaurateur!) and Chef J. Gamboa. They’ve kept our beloved Spanish classics like Suckling Pig Sisig, Slow Roasted U.S. Beef Belly, and Paella Montaña on the menu. Chef Gamboa also loves to surprise us with new dishes inspired by his travels!

So recently, we had the opportunity to try their menu, including two new dishes: Torrenzos and Paella de Costillas de Vaca.

The Torrenzos, an appetizer featuring crisp-fried, salt-cured pork belly, are a true delight. This delectable tapa is served with a rich, 65-degree egg sauce, enhanced with Grana Padano cheese and a hint of Pedro Ximenez vinegar. These two are paired perfectly.

Next up is their Paella de Costillas de Vaca, which features seasoned rice with braised U.S. beef short ribs, topped with an orange rind and parsley gremolata. It’s a unique and hearty combination that’s just perfect for this rainy weather. The flavor of this paella isn’t overly strong, allowing it to beautifully complement bolder dishes like the Spicy Sisig (Cabeza De Cerdo) or Torrenzos. Trust me, it truly enhances the Paella de Costillas de Vaca.

Other dishes that are worth trying are the Croquettas de Setas, Potato Carbonara Omelette, and the Warm White Chocolate Bread Pudding.
