Solaire’s Director of Beverage, Daniel Blais, meticulously chose each wine to complement the menu. Chef Andrea Spagoni, a native of Turin, Italy, designed the dishes with regional Italian cuisine in mind, adding his unique Finestra flair.

The evening begins with a vibrant and fresh pairing: citrus-marinated scallops served with a Lugana San Benedetto 2023 that offers bright notes of peaches and citrus. Next, savor a rich veal and tuna tartare complemented by the Passobianco 2021, a Chardonnay with flavors of ripe peach and melon. The third course is a succulent slow-cooked grouper paired with the medium-to-full-bodied Barbera d’Alba Superiore 2020, layered with notes of plums and spices.

For the fourth course, indulge in a luxurious artisanal fregola with guanciale and black truffle, expertly paired with a Langhe Nebbiolo 2021 that has a smooth finish. This is followed by a perfectly roasted pork tenderloin with grapes and celery jam, which is elevated by the versatile Rosso di Montalcino 2021.

The feast concludes with a decadent dark chocolate cake with fig jam and yogurt, a blissful balance to the robust Amarone Classico 2018, ensuring a sweet and unforgettable finale.
